Though traditionally not associated with Indian weddings, cakes are becoming a popular addition to the big day's menu, possibly because they lend a certain opulent statement to the occasion more than for taste.

After having borrowed their construction from the original tiered wedding cake, Indian shaadi-inspired cakes have undergone a very colourful makeover. The proof lies in the pudding... err fondant: Beautiful bright reds, oranges and pinks, intricate henna patterns, auspicious paisley designs, and Ganesha poojas -- all of these form an integral part of several Indian shaadis, are embossed, iced and sugared painstakingly all over these cakes to add to the pomp and flair associated in particular with North-Indian weddings.

What's interesting to note is that most of these cakes have been made for Indian families outside India, by cooks who aren't of Indian origin, but have created these based on their interpretations of an Indian wedding, and have pretty much hit the nail on the head. (Even though they'll never replace the wonder that is gulaab jamun).
